VIRGIN OLIVE OIL
Organically cultivated D.O.P.
Our extra virgin olive oil is organic not only in terms of cultivation
but also with regards to the entire production process, from
the collection carried out manually before the fruit has fully
matured in order to create oil free of any acids. Our oil has
0.2% of acids against 1% requested by the EEC in order to bear
the name of "extra virgin".
The olives collected during the day are taken to the olive-press
in the evening where they are first separated from leaves and
branches and then washed and pressed by a stone grind that creates
a mush which is distributed across circular filters placed one
on top of each other which will then be subject to a slow and
constant pressure until the oil comes out with its genuine flavour,
with its vitamins and minerals unchanged. The first juice created
is of a green-golden colour with a slightly fruity taste. Our
production is limited and is carried out on an exclusive artisan
basis and is examined and certified by the analysis Department
of Food Science of the University of Perugia.
The Umbria Region has granted our production the D.O.P. qualification
with no. 308 - subjecting the manufacturer to severe controls
and to a discipline that limits the production area, the type
of land, regular pruning of the olive grove, the number of plants
and the amount of oil products. This Regulation is very important
in order for the creation of a truly genuine oil, extracted
from its area of origin and not created and mixed with poor
quality oils.
The brandname, patented by the State "IL RAMO D'ORO"
is the manufacturer's certificate and guarantee. All of this
contributes to the extra virgin olive oil belonging to the "Colle
del Paradiso" as one of the very best oils in Italy, as
the editor G. Mondadori indicated in one of his recent publications.
